Fried Squid Recipe

Squid is the sea creature with the lowest cholesterol. Squid, which has different cooking methods in world cuisine, is mostly fried and served with tarator sauce in Turkey. Apart from this, there are also various recipes such as baked calamari, stuffed calamari, and casserole calamari. Grilled calamari is a very delicious alternative prepared by soaking it in a special sauce. Fried calamari, an indispensable part of fish and appetizer tables and indispensable for fish restaurants, is a recipe you can easily make at home. When you pay attention to a few tips, you can cook delicious and soft calamari, just like what you eat in restaurants.

Ingredients for Fried Squid Recipe

  • 1 whole squid

  • 1 teaspoon of granulated sugar

  • 1 teaspoon baking soda

  • Juice of 1 lemon

  • 1 teaspoon of salt

  • 2 cups oil

  • 1 bottle of mineral water

  • 1 tea glass of flour (you can also use corn flour or breadcrumbs if you wish.)

How to Make Fried Squid?

  1. First of all, clean the squids and cut them into rings. If you buy frozen squid, let it thaw in cold water first. You can have the squid cleaned by your fisherman.

  2. Place the squids in a deep bowl where we will marinate them. Add sugar, baking soda and lemon juice and knead by squeezing for 15-20 minutes until your hands get tired (I recommend doing it for half an hour). It will start to foam, this is normal. Be sure to knead the squid to make it soft.

  3. Add mineral water to it, stretch it and let it rest in the fridge for at least 3 hours.

  4. At the end of the time, drain the squids waiting in the marinade mixture, but do not rinse.

  5. Mix flour and salt in a tray or bowl. Coat the drained squid in flour.

  6. Put oil into your frying pan and heat it. He must be very angry.

  7. Fry the calamari coated in flour in hot oil for 2-3 minutes until they turn golden brown. Squid is a seafood that cooks quickly. If you keep it too long, it will become rubbery.

  8. If you add all the squid at the same time, the temperature of the oil will decrease and the oil will absorb. That's why you have to cook it in batches. Each time, wait for the oil to get hot again and cook like that.

  9. Leave the squids on a paper towel for 5 minutes to drain excess oil and place them on a serving plate.

  10. Serve with tarator sauce. Bon appetit.

Squid Pan Tips

If you pay attention to these tips, you can make fried calamari that does not absorb oil, is soft like Turkish delight, and has a crispy exterior.


1. What should we do to make the squid soft?

To make the squid soft, we must season it and keep it in the refrigerator for a while. While seasoning, we must soften it by rubbing it with our hands. This process is the most important issue. If the squid is not marinated by kneading it in the sauce for at least 20-25 minutes, it will be tough.


2. How long should we let marinated squid rest?

After softening by kneading, we should cover the squids with stretch wrap and keep them in the refrigerator for at least 3 hours. Holding time is very important for the squid to soften. The longer they rest, the softer they become. If you have time, it would be better if you make it the night before and let it sit.

3. How to fluff up the sauce on the outside of the squid?

Never wash the squid after soaking it in sauce. Remove from the sauce and immediately coat in flour. In this way, the soda sauce on the outside of the calamari will puff up and become crispy.


4. What should we do to prevent the squid from absorbing oil?

To prevent the squid from absorbing oil, you should definitely cook it in hot oil and not throw all the squid into the oil at the same time. If you throw all the squid at the same time, the oil will cool and cause the squid to absorb oil. The sauce on the outside of the calamari, which is soft when you first put it, will turn brown and crispy within 2 minutes.


5. What to use to marinate squid?

You can use mineral water, beer or milk in the sauce you use to marinate the squid.
